Almond Pulp Energy Bites

If you've ever made home made almond milk you know you're left with a big clump of "almond pulp" after straining all the liquid out. Pleeeeaaassseee don't throw that pile of almondy goodness away! There are a ton of things you can do with the leftover pulp, and here's a super easy one I whipped up in about 5 mins this morning after making a fresh batch of almond milk for the week! It can be easily modified to include more protein, different flavors, etc.

INGREDIENTS (makes 18):

  • 1.5 cups almond pulp
  • 2 scoops plain organic pea protein powder (or protein of choice)
  • 1/4c honey (or maple syrup)
  • 5 tbsp cacao nibs 
  • 1/4c almond milk (or enough to hold the mixture together, will depend on how "wet" your almond pulp is)
  • 1 tsp vanilla 
  • a pinch of sea salt and cinnamon 
  • optional add-ins: chia, ground flax, shredded coconuts, dried fruits, chopped nuts, pumpkin puree (in place of liquid) 

INSTRUCTIONS:

  • combine all ingredients except for the almond milk and mix thoroughly
  • depending on how dry the mixture is, add enough almond milk to hold the mixture together but be careful not to make it too runny
  • roll the mixture into about 18 bite-sized balls 
  • place in the fridge 
  • enjoy 2-3 of them for an afternoon pick me up or a pre-workout snack!
