Everything (no) Bagel Breakfast

I have a deep love for everything bagels but, sadly, they don't love me back. Here's the closest solution I've been able to come up with.

INGREDIENTS (serves 1):

  • 1/3c cauliflower rice
  • 1/3c gluten free oats
  • TJ's Everything But The Bagel Seasoning
  • 2 pastured eggs
  • 4 egg whites 
  • fat of choice (I used a little real butter) 

INSTRUCTIONS:

  • bring 1/3c cauli rice and enough water to cover it to a boil until softened and slightly translucent. 
  • add 1/3 c oats and a little additional water and reduce heat to simmer until oats are cooked (depending on the type of oat, anywhere from 2-6 mins)
  • in a separate pan, heat fat of choice over medium heat
  • add 2 whole eggs and 4 egg whites and cook however you like 'em (I always prefer runny yolks so I scramble the egg whites separately)
  • when the cauli/oats are done, add in a few generous shakes of the TJ's bagel seasoning and add to a bowl
  • optional: shape into a bagel-like-circle (as pictured above) 
  • top with eggs and enjoy! :)
